Ingredients:
Fiesta Fit low carb flour tortillas
Cooked, shredded chicken
Buffalo sauce (your favorite brand or homemade)
Cream cheese, softened
Shredded cheddar cheese
Ranch dressing or blue cheese dressing
Mini tostada shells or tortilla chips (for the crunch!)
Cooking spray or a little oil, for crisping
Optional extras:
Diced green onion for freshness
Diced celery for added crunch
Lettuce
Instructions:
Mix the filling: In a bowl, combine shredded chicken, buffalo sauce, cream cheese, and a handful of shredded cheddar. Stir until creamy and well mixed.
Layer it up: Cut a little circle out of a Fiesta Fit tortilla. In the center, add a spoonful of the buffalo chicken mixture, a drizzle of extra buffalo sauce, a sprinkle of extra cheese, and top with a mini tostada shell or crushed tortilla chips for crunch.
Fold & seal: Carefully fold the edges of the tortilla over the center in a circular motion, creating pleats. Press gently to seal.
Crisp it up: Heat a skillet over medium heat with a light spray of oil. Place the wrap seam-side down and cook for 2–3 minutes until golden and sealed. Flip and cook the other side until crisp and heated through.
Serve hot with extra ranch or buffalo sauce for dipping!
