Chicken Enchiladas

Ingredients

• Celia's corn tortillas

• Rotisserie chicken

• Shredded cheese

• Red enchilada sauce

• Tomato

• Jalapeño

• Sour cream

• Cilantro

Instructions

1. Wrap rotisserie chicken, shredded cheese and red enchilada sauce into Celias corn tortillas

2. Place the wrapped tortillas in an oven safe container

3. Pour enchilada sauce and sprinkle extra cheese over the top

4. Cook in the oven at 350 until the cheese bubbles

5. Top with chopped tomato, jalapeño, sour cream and cilantro

6. Serve and enjoy!
