Crock Pot Chicken Enchiladas

Try these crock pot chicken enchiladas using Fiesta Fit low carb Queso wraps! Super quick and easy dinner the whole family will love🥑❤️


  • Fiesta Fit low carb wraps (Queso flavor)

  • Three chicken breasts

  • Can of black beans

  • Can of corn

  • One white onion

  • Two cloves of garlic

  • Chicken broth

  • Tomato purée

  • Diced tomatoes

  • Cumin

  • Chili powder

  • Shredded cheese


  1. Put frozen chicken breasts, black beans, corn, chopped white onion, garlic, chicken broth, tomato puree, diced tomatoes, cumin, and chili powder in crock pot at the beginning of the day and let it cook for 7ish hours

  2. Wrap mixture into Fiesta Fit low carb wraps and line in a oven-safe glass container

  3. Sprinkle shredded cheese over wraps

  4. Bake at 350 until the cheese bubbles

  5. Top with sour cream, serve & enjoy!
