These Laughing Cow Turkey Enchiladas are the creamiest, coziest way to repurpose Thanksgiving leftovers. Stuffed with caramelized onions, leftover turkey, cranberry sauce, and Laughing Cow cheese—then topped with a garlicky Laughing Cow sauce—they’re sweet, savory, and unbelievably satisfying.


Baked until melty and golden, this is the ultimate low-carb comfort food.


🛒 Ingredients

  • Celia’s Low-Carb Wraps

  • Leftover turkey, shredded

  • Caramelized onions

  • Cranberry sauce, small spoonful mixed into filling

  • 6 Laughing Cow cheese triangles

  • Garlic powder

  • Olive oil or baking spray


👩‍🍳 Instructions

1. Mix the filling

Combine in a bowl:

  • Leftover turkey

  • Caramelized onions

  • 4 Laughing Cow triangles

  • 1–2 spoonfuls cranberry sauce

Mix until creamy and cohesive.

2. Assemble enchiladas
