Air Fryer Black Bean & Corn Taquitos

Ingredients:

  • 1/2 can black beans, drained and rinsed

  • 1/2 can yellow corn, drained

  • 1 handful shredded cheese (cheddar, Monterey Jack, or your favorite)

  • 2 spoonfuls salsa

  • 1/2 cup sour cream

  • Celia’s flour tortillas (as many as needed)

  • Cooking spray or oil

Instructions:

  1. Prepare the Filling:

    • In a bowl, mix together the black beans, corn, shredded cheese, salsa, and sour cream until well combined.

  2. Assemble the Taquitos:

    • Warm Celia’s flour tortillas slightly to make them easier to roll.

    • Spoon the bean and corn mixture onto each tortilla.

    • Roll the tortillas tightly around the filling.

  3. Air Fry:

    • Preheat your air fryer to 350°F.

    • Lightly spray or brush the taquitos with cooking spray or oil.

    • Place the taquitos in the air fryer basket in a single layer, seam-side down.

    • Air fry for 10-12 minutes, until golden and crispy.

  4. Serve:

    • Enjoy your hearty black bean and corn taquitos with salsa, guacamole, or sour cream for dipping!
