Ingredients:
1/2 can black beans, drained and rinsed
1/2 can yellow corn, drained
1 handful shredded cheese (cheddar, Monterey Jack, or your favorite)
2 spoonfuls salsa
1/2 cup sour cream
Celia’s flour tortillas (as many as needed)
Cooking spray or oil
Instructions:
Prepare the Filling:
In a bowl, mix together the black beans, corn, shredded cheese, salsa, and sour cream until well combined.
Assemble the Taquitos:
Warm Celia’s flour tortillas slightly to make them easier to roll.
Spoon the bean and corn mixture onto each tortilla.
Roll the tortillas tightly around the filling.
Air Fry:
Preheat your air fryer to 350°F.
Lightly spray or brush the taquitos with cooking spray or oil.
Place the taquitos in the air fryer basket in a single layer, seam-side down.
Air fry for 10-12 minutes, until golden and crispy.
Serve:
