🍳 Breakfast Taquitos with Celia’s Corn Tortillas


Start your day with a crunch! These Breakfast Taquitos combine scrambled eggs, crispy bacon, golden hashbrowns, melted cheese, and salsa — all wrapped in Celia’s Corn Tortillas and air-fried to perfection. They’re easy to make, full of flavor, and ideal for busy mornings or weekend brunches! 🌮☀️


🛒 Ingredients

  • 2 scrambled eggs

  • 2 strips cooked bacon (chopped)

  • 1 crispy hashbrown patty (crumbled)

  • 1 handful shredded cheese (cheddar, Monterey Jack, or your favorite)

  • 2 spoonfuls salsa

  • Celia’s Corn Tortillas (as many as needed)

  • Cooking spray or oil


👩‍🍳 Instructions

1. Prepare the Filling:In a medium bowl, combine scrambled eggs, chopped bacon, crumbled hashbrown patty, shredded cheese, and salsa. Mix well until evenly coated.

2. Assemble the Taquitos:Warm Celia’s Corn Tortillas slightly to make them flexible.Spoon the egg and bacon mixture onto each tortilla and roll tightly.

3. Air Fry:

  • Preheat the air fryer to 350°F.

  • Lightly spray or brush the rolled taquitos with oil or cooking spray.

  • Place seam-side down in a single layer in the air fryer basket.

  • Cook for 10–12 minutes, until golden brown and crispy.
