Ingredients:
2 scrambled eggs
2 strips cooked bacon, chopped
1 crispy hashbrown patty, crumbled
1 handful shredded cheese (cheddar, Monterey Jack, or your favorite)
2 spoonfuls of salsa
Celiaâs corn tortillas (as many as needed)
Cooking spray or oil
Instructions:
Prepare the Filling:
In a bowl, combine the scrambled eggs, chopped bacon, crumbled hashbrown patty, shredded cheese, and salsa. Mix well.
Assemble the Taquitos:
Warm Celiaâs corn tortillas slightly to make them easier to roll.
Place a spoonful of the egg and bacon mixture onto each tortilla.
Roll the tortillas tightly around the filling.
Air Fry:
Preheat your air fryer to 350°F.
Lightly spray or brush the taquitos with cooking spray or oil.
Place the taquitos in the air fryer basket in a single layer, seam-side down.
Air fry for 10-12 minutes, until crispy and golden brown.
Serve:
Enjoy your crispy breakfast taquitos with extra salsa, sour cream, or guacamole on the side!
