Breakfast Taquitos🥓🍳😍

Ingredients:

  • 2 scrambled eggs

  • 2 strips cooked bacon, chopped

  • 1 crispy hashbrown patty, crumbled

  • 1 handful shredded cheese (cheddar, Monterey Jack, or your favorite)

  • 2 spoonfuls of salsa

  • Celia’s corn tortillas (as many as needed)

  • Cooking spray or oil

Instructions:

  1. Prepare the Filling:

    • In a bowl, combine the scrambled eggs, chopped bacon, crumbled hashbrown patty, shredded cheese, and salsa. Mix well.

  2. Assemble the Taquitos:

    • Warm Celia’s corn tortillas slightly to make them easier to roll.

    • Place a spoonful of the egg and bacon mixture onto each tortilla.

    • Roll the tortillas tightly around the filling.

  3. Air Fry:

    • Preheat your air fryer to 350°F.

    • Lightly spray or brush the taquitos with cooking spray or oil.

    • Place the taquitos in the air fryer basket in a single layer, seam-side down.

    • Air fry for 10-12 minutes, until crispy and golden brown.

  4. Serve:

    • Enjoy your crispy breakfast taquitos with extra salsa, sour cream, or guacamole on the side!
