Start off the weekend the right way with these delicious chickpea tacos made with Celia’s corn tortillas😋
Ingredients
Celia's corn tortillas
Chickpeas
Red chili powder
Salt
Cherry tomatoes
Avocado
Minced garlic
Olive oil
Sesame seeds
Mint leaves
Mixed greens
Instructions
Pour one can of chickpeas, red chili powder and salt into a pot with water and let it sit on medium heat for 3 minutes
Drain water and add olive oil, mint and sesame seeds, cover and let it sit over low heat for 2 minutes
Chop tomatoes and smash together with half an avocado with minced garlic, olive oil and salt
Heat Celia's corn tortillas on the stove top until crispy
Layer mixed greens, chickpeas, avocado mixture on tortillas to create the perfect tacos!
