Salmon Tacos

For tonight’s dinner, try these delicious salmon tacos with Celia’s yellow corn tortillas🌮 Homemade tzatziki sauce and veggie salad make the perfect toppings😋


Ingredients

  • Celia's yellow corn tortillas

  • Salmon

  • Plain greek yogurt

  • Dill

  • Olive oil

  • Salt, pepper, garlic powder

  • Cucumber

  • Minced garlic

  • Lemon juice

  • Cherry tomatoes

  • Green onion

  • Mint

  • Argula

  • Spinach

Instructions

  1. Cut salmon into small bite sized pieces

  2. Coat in olive oil, lemon juice, salt, and pepper and bake on 350 for 13 minutes

  3. Mix greek yogurt, chopped dill, chopped cucumber, minced garlic, and salt to make the tzatziki sauce

  4. Chop tomatoes, cucumber and green onion into small pieces and mix in a bowl with mint, spinach, arugula, olive oil, lemon juice, salt, pepper and garlic powder

  5. Toast tortillas on stove top and layer salmon bites, tzatziki sauce and veggie salad to make the tacos

  6. Serve and enjoy!
